1 Box Original Veggie BUBBA burgers
4 Roma tomatoes
6 Tsp. shallots, thinly sliced
6 Tbsp. feta cheese, crumbled
Salt
Pepper
8 Tbsp. olive oil
8 Tsp. champagne or red wine vinegar
Mint leaves
Preheat your skillet over medium heat. Thinly slice your shallots. Slice your roma tomatoes.
In the preheated skillet, add a tablespoon of olive oil to the pan. Place the frozen Original Veggie BUBBA burger in the pan, and cook according to package directions, about 5 minutes per side.
While the Original Veggie BUBBA burger cooks, prepare the salad. On the serving dish, arrange the sliced roma tomatoes in a single layer. Top with a few thinly sliced shallots, and sprinkle the roma tomatoes with salt and pepper. Drizzle everything with the remaining tablespoon of olive oil and champagne or red wine vinegar.
When ready to serve, sprinkle the roma tomato salad with feta cheese. Top the salad with the cooked Original Veggie BUBBA burger. Garnish with mint leaves. Enjoy!
